Good tutorial, but you need to edit it. You do a lot of "backwards and forwards" which really messes up the flow when you're trying to learn. I didn't need to change the color and opacity 6 times.

When I don't select or don't have any selection tge the select and mask option don't show up on top, any recommendation to solve it?

On Photoshop 2020 you don't need to separate the hair from the body for masking. Just mask the body or the hair first and then come back to the masking screen. All the global settings are reset after doing that.
